In the book, Breathing On Her Own, the main character, Molly, is a great cook. She is a wife, mother, and grandmother. Her “go to” to make people feel better is often food. I’m sharing here two of her favorite “recipes.” Though the first, Molly’s Chicken Fried Rice, is simply how Molly throws meals together, it is a favorite dinner she and her husband enjoy. The second is a tried and true recipe that has been in my family (and now Molly’s) for over fifty years.
One of the family favorites are ice cream filled brownies. These brownies are a favorite of my family, too. In the novel, Molly makes them for an event to celebrate her daughter’s homecoming. I bake them to celebrate anything! Enjoy the recipes.
Chicken Fried Rice
Cut two frozen chicken breasts into small chunks. Pour a small amount of olive oil in a skillet. Add chopped onion and garlic to the skillet and sauté Add the chicken and cook until done. Pour a can of crushed pineapple (drained ) and teriyaki sauce over the mixture and warm. I use about ¼ cup of teriyaki sauce but Molly tends to simply pour it on until it looks right to her. Her husband, Travis often adds more at the table. Set the chicken mixture aside.
Bring water to a boil and cook rice according to the directions (Molly and I tend to use instant rice and I sometimes even cook it in the microwave. Just sayin’…)
Mix the Chicken and rice together and serve. Perfect with steamed broccoli.
Molly’s Famous Ice Cream Brownies
2 C. sugar
1 ½ C. flour
1 C. Crisco
4 eggs
½ C. milk
6 T. cocoa
1 tsp. salt
½ tsp. vanilla
Preheat oven to 350 degrees. Grease a 9X12 inch rectangular cake pan. Mix first eight ingredients in a large bowl until the batter is smooth. Pour into the cake pan. Bake at 350° for thirty minutes. Brownies are done if a toothpick inserted in the middle comes out clean. Cool a bit and cut into squares. While still warm, split individual brownies horizontally and fill with a scoop of ice cream. Cover with brownie top and pour warmed hot fudge topping over brownies. Serve.

Following her retirement as a professor of education from Cincinnati Christian University, Rebecca turned her pen to the world of fiction. She has also published several articles in Chicken Soup for the Soul, The Lookout Magazine, and Home Health Aide Digest.
