I love Tuscany. I’ve been to Italy a couple times, but no where has grabbed my heart like Tuscany, with its rolling green hills striped with lush vines, cloistered cites crouching on hilltops, the endless blue sky, and the sense of deep history embedded in the stone buildings. But most of all, the food. Oh, the food. Every kinds of pasta, fresh vegetables, seafood, yummy cheeses, tangy balsamic vinegar and…wine. Oh, the wine. Robust, delicate, fruity, chocolaty—so many different varietals and tastes, and I fell in love with wine and food pairings.

During our first trip, we scheduled a day with a chef, learning how to make homemade pasta, foccacia and a Bolognese sauce. We laughed, got flour all over us, and drank chianti.

But most of all, we learned how to cook like an Italian. We’re still not great at it, but since then, my hubby and I have tried to perfect a simple Italian dish—Aglio e Olio. (Pasta with garlic). Easy, delicious, our favorite way to eat it is as a side dish to a tangy steak, fresh shrimp or grilled chicken. (and don’t forget the caprese salad!)

I served this dish to York and RJ, on a stopover in Tuscany during their romp through Europe, in my upcoming series, The Epic Story of RJ and York. (I think they loved it too!)

Here’s how to make it.

Ingredients:

1 lb spaghetti noodles (you’ll want dried, so you can cook to al dente. If fresh, do not overcook!)
3 cloves garlic
½ cup fresh extra virgin olive oil
2 Tbls chopped Italian parsley
½ lemon, zested
Freshly grated Parmesan-Reggiano
½ cup pasta water

How to make:

Bring a pot of water, generously salted, to a boil. Add the noodles, bring again to a boil, then shut it off, lid it and set a timer for 10 minutes. (perfect every time!) Do not remove the cover.

Mince garlic and add it, with the olive oil and warm in a skilled until the garlic is a golden, about 8 minutes.

Drain the pasta, reserving ½ cup water. Add the pasta to the skillet, and enough pasta water to make it creamy (stirring it all into the garlic and oil). You don’t have to add all the ½ cup—just enough to make it not dry. Turn off heat. Add the parsley and lemon zest. Then add the parmesan (optional—it’s just as delicious without it). Season to taste.

And that’s it! Easy, right? It serves about 4-6 people, depending on serving size.

Pair it with a nice white (e.g. a pinot noir, or a vouvray, or even a Moscato) if you’re having seafood.

Or, with a chianti, or cabernet sauvignon for steak.

Or better, just go to Tuscany.
