The Smell and Taste of Christmas!

Bentonsport: A Christmas Story is about two people, from two eras, who meet two weeks before Christmas. It is a cozy romance, perfect for the holiday season!
Sarah Peterson, one of the main characters, owns and operates a bakery from her home. Two weeks before Christmas, she is baking up a storm—rolls, Kringles, and, of course, Christmas cookies. Thomas Barton, the other leading character, spends a good deal of time working side-by-side with her as she meets the big orders the holiday brings.
Sarah uses a Scottish Shortbread recipe for her iced and decorated Christmas cookies.
This has been my “go-to” Christmas cookie for decades. The recipe I use was handed down to me from my mother-in-law, who received it from a friend, Babs Stirrat, who was originally from Scotland.
What I love about this recipe is that it is simple—only three ingredients (other than the colored sugar!) and delicious. But like most good things in life, including romances, it takes special care. As Sarah states, “One minute it is golden, and the next, black.”
So, though straightforward in terms of ingredients, you must watch these cookies like a toddler near a bowl of icing—or you will be sorry!
Here is the recipe:
Scotch Shortbread Cookies (Babs Stirrat)
Preheat the oven to 350F.
½ lb. butter
½ lb. cup sugar
3 cups flour.
Cream the butter and sugar. Cut in the flour, using most of the 3 cups (the rest will be used on the rolling pin later). Mix with fingers, not quite kneading. Roll out to ½” thickness. Cut with cookie cutters. Decorate with colored sugar. Bake ABOUT 30 minutes—give or take 10 minutes (yes – this is the finicky part!) until lightly brown. Transfer to a wire rack to cool.
These cookies are simple yet yummy!
